Ingredients:
- 1 cup grated carrots
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts optional
- 1/2 cup raisins optional
- Maple syrup and cream cheese frosting for serving
Instructions:
In a large bowl, combine grated carrots, flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt
In another bowl, whisk together eggs, buttermilk, vegetable oil, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix
Fold in the chopped walnuts and raisins if using
Preheat your waffle iron and lightly grease it with cooking spray or oil
Pour the carrot cake waffle batter onto the hot waffle iron and cook according to the manufacturers instructions, usually for 3-5 minutes or until golden brown and crispy
