Ingredients:
- 1 cup crushed pecans
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 package instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce
- Whipped cream for topping
Instructions:
In a bowl, combine crushed pecans, graham cracker crumbs, and melted butter to create the crust
Press the crust mixture into the bottom of serving glasses or jars
In a separate bowl, whisk together instant vanilla pudding mix and cold milk until thickened
Pour the pudding over the crust layer in the glasses
In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form
Carefully layer the whipped cream on top of the pudding layer
Drizzle caramel sauce over the whipped cream layer
Repeat the layers until the glasses are filled, ending with a dollop of whipped cream and a drizzle of caramel sauce
Chill the parfaits in the refrigerator for at least 2 hours before serving
Top with additional crushed pecans before serving, if desired
