Pellet Grill Seafood Paella

If you like seafood paella, try this smoky version made on a pellet grill. When cooked over a pellet grill, the seafood and rice get a delicious wood-fired flavor. The shrimp, mussels, calamari, and fish make for a hearty and satisfying meal.

Ingredients:

  • 1 cup Arborio rice
  • 2 cups chicken broth
  • 1/2 cup white wine
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 12 large shrimp, peeled and deveined
  • 12 mussels, cleaned
  • 1/2 pound calamari rings
  • 1/2 pound firm white fish fillets, cubed
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

Set a cast-iron skillet on the grate of your pellet grill and heat it up to 375F 190C

Heat the olive oil in the pan and add the onion, garlic, and bell pepper

Cook until the vegetables are soft

To this mix in the saffron threads, diced tomato, and smoked paprika

Cook for two more minutes

Then add the chicken broth and white wine and stir it all together

Add pepper and salt

Set seafood like fish, shrimp, mussels, and calamari on top of the rice mix

Close the grill lid and put aluminum foil over the pan

While cooking, make sure the rice is soft and the seafood is fully cooked

This should take about 20 to 25 minutes

Take the foil off and let it rest for a few minutes

Add chopped parsley as a garnish before serving
