A creamy clam chowder that is comforting and has the perfect balance of flavors, with soft clams, bacon, and hearty potatoes.
Ingredients:
- 3 cans clams, drained
- 4 slices bacon, chopped
- 1 onion, diced
- 2 potatoes, diced
- 1 cup clam juice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
In a large pot, cook bacon over medium heat until crispy
Remove bacon and set aside, leaving the bacon fat in the pot
Add diced onion to the pot and cook until translucent
Stir in flour and cook for 1-2 minutes
Gradually whisk in chicken broth and clam juice, making sure there are no lumps
Add diced potatoes and bring to a simmer
Cook until potatoes are tender, about 10 minutes
Stir in clams and heavy cream
Simmer for another 5 minutes
Season with salt and pepper to taste
Serve hot, garnished with chopped parsley and reserved crispy bacon
