Shredded Rainbow Salad

This vibrant and nutritious shredded rainbow salad is bursting with color and flavor. Its packed with various vegetables and nuts, making it a healthy and satisfying dish.

Ingredients:

  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup shredded kale
  • 1 cup shredded red bell pepper
  • 1 cup shredded yellow bell pepper
  • 1 cup shredded green bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Shred the red cabbage, carrots, kale, red bell pepper, yellow bell pepper, and green bell pepper and put them all in a large bowl

Dice the cilantro and add it to the bowl along with the almonds and dried cranberries

Mix lemon juice, olive oil, salt, and pepper in a small bowl with a whisk

Add the dressing to the salad and mix it all together

Serve right away or put in the fridge until youre ready to serve
