Ingredients:
- 1 cup root beer
- 3 envelopes 1/4 oz each unflavored gelatin
- 1 1/2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 teaspoon salt
- 1/4 cup powdered sugar, for dusting
- 1/4 cup cornstarch, for dusting
- 1 teaspoon vanilla extract
- 1 teaspoon root beer extract
- 1/2 teaspoon vanilla bean paste
- 1/2 cup crushed root beer barrel candies, for topping optional
Instructions:
Pour 1/2 cup of root beer into a mixing bowl and sprinkle the gelatin over it
Let it sit for about 10 minutes to soften
In a saucepan, combine the remaining 1/2 cup of root beer, granulated sugar, corn syrup, and salt
Stir over medium heat until the sugar has dissolved, and the mixture reaches 240F 115C on a candy thermometer
Once the sugar syrup is at the right temperature, slowly pour it into the gelatin mixture while beating on low speed with an electric mixer
Gradually increase the speed to high and beat for about 10-12 minutes until the mixture becomes thick and fluffy
Add the vanilla extract, root beer extract, and vanilla bean paste to the marshmallow mixture
Beat for an additional 2-3 minutes until well combined
In a separate bowl, mix together the powdered sugar and cornstarch
Dust a 9x9-inch baking pan with the powdered sugar and cornstarch mixture to prevent sticking
Pour the marshmallow mixture into the prepared pan and smooth the top
If desired, sprinkle the crushed root beer barrel candies over the surface
Let the marshmallows set at room temperature for at least 4 hours or overnight
Once set, use a knife or cookie cutters dusted with the powdered sugar and cornstarch mixture to cut the marshmallows into desired shapes
Toss the marshmallows in the remaining powdered sugar and cornstarch mixture to coat evenly
