This vegan tomato basil soup is easy to make, tastes great, and is great for a cozy meal.
Ingredients:
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 6 cups vegetable broth
- 1 can 28 ounces crushed tomatoes
- 1/2 cup chopped fresh basil leaves
- Salt and pepper, to taste
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
This will take about 5 minutes of cooking after you add the chopped onion and garlic
Add the tomato paste and vegetable broth
Turn the heat down to low and let it cook for 20 minutes
Add the chopped basil leaves and season with salt and pepper to taste
Blend the soup until its smooth with an immersion blender
Serve hot, and if you want, top with extra basil leaves
