Ingredients:
- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup grated carrot
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 4 burger buns
- Lettuce leaves
- Tomato slices
- Vegan mayo
- Mustard
Instructions:
In a large bowl, mash the cooked lentils with a fork or potato masher
Add breadcrumbs, chopped onion, grated carrot, chopped bell pepper, minced garlic, cumin, paprika, salt, and pepper to the mashed lentils
Mix well to combine
Divide the lentil mixture into four equal portions and shape them into burger patties
Heat olive oil in a skillet over medium-high heat
Add the lentil patties and cook for about 4-5 minutes on each side or until they are golden brown and cooked through
Toast the burger buns in the skillet until they are lightly browned
Assemble the lentil burgers by placing a lettuce leaf on the bottom bun, followed by a lentil patty, tomato slices, vegan mayo, and mustard
Top with the other half of the bun
Serve the lentil burgers hot with your favorite side dishes
