The flaked salmon, herbs, and Parmesan cheese in these salmon ball croquettes taste great together. They are fried to perfection and come with a tangy herb sauce. They look great as an appetizer or as a light main course.
Ingredients:
- 400g cooked salmon, flaked
- 1/2 cup breadcrumbs
- 2 eggs
- 2 tablespoons chopped parsley
- 1 tablespoon chopped chives
- 1 tablespoon chopped dill
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1/4 cup chopped fresh herbs parsley, chives, dill
- Salt and pepper to taste
Instructions:
Crack the salmon into small pieces and add the breadcrumbs, eggs, parsley, chives, dill, Parmesan cheese, salt, and pepper
Mix the ingredients together well in a bowl
Make little balls out of the mixture, then flatten them out a bit to make croquettes
Set a pan on medium heat and add the olive oil
Fry the croquettes for two to three minutes on each side, or until they are golden brown and fully cooked
Mix mayonnaise, lemon juice, Dijon mustard, minced garlic, chopped fresh herbs, salt, and pepper together to make the herb sauce
Put the herb sauce on top of the hot salmon croquettes to serve
