A delicious, creamy, paleo and AIP-friendly Caesar dressing. Ideal as a dip for vegetables or to drizzle over salads.
Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 2 tablespoons coconut milk
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper omit for AIP
- 1/4 cup chopped fresh parsley optional, for garnish
Instructions:
In a blender or food processor, combine the extra virgin olive oil, apple cider vinegar, coconut milk, lemon juice, Dijon mustard, garlic powder, onion powder, sea salt, and black pepper if using
Blend until smooth and well combined
Taste and adjust seasoning if needed
Transfer the dressing to a jar or container with a tight-fitting lid
Store in the refrigerator until ready to use
Before serving, shake the dressing well to recombine
If desired, garnish with chopped fresh parsley before serving
