Ingredients:
- 2 cups fresh pineapple chunks
- 1/4 cup brown sugar
- 1 tablespoon butter
- 4 flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1 cup diced strawberries
- 1 jalapeo pepper, seeded and minced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions:
Set the pan on medium heat and melt the butter
Put the brown sugar and pineapple chunks in the pan
It will take about 8 to 10 minutes of stirring every now and then until the pineapple is caramelized and golden brown
Take the pineapple that has turned caramelized out of the pan and set it aside
Add a tortilla to the pan and top it with shredded Monterey Jack cheese
Add more caramelized pineapple and another tortilla on top
About 3 to 4 minutes on each side, until the bottom tortilla is golden brown and the cheese melts
Do it again with the rest of the filling and tortillas
Dice the strawberries and put them in a bowl
Add the minced jalapeo pepper, chopped red onion, fresh cilantro, and lime juice
To taste, add salt and pepper to the strawberry salsa
Put the spicy strawberry salsa on the side and serve the pineapple quesadillas with caramelized pineapple on top
