Ingredients:
- 1 cup cooked brown rice
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1 package Gardein crispy tenders or any vegan chicken substitute
- 4 cups mixed greens such as spinach, arugula, or kale
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped roasted peanuts
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Follow the directions on the package to cook Gardein crispy tenders until they are golden brown and crispy
Apple and avocado dices, mixed greens, red onion and cilantro chops, and roasted peanuts should all be put in a large bowl
To make the dressing, mix lime juice, olive oil, salt, and pepper in a small bowl with a whisk
