Mango-Avocado Brown Rice Gardein Crispy Tenders Salad Bowl

This vibrant salad bowl combines the sweetness of mango, creaminess of avocado, and crunchiness of Gardein crispy tenders, all atop a bed of nutritious brown rice and mixed greens. Its a satisfying and flavorful vegan meal thats perfect for lunch or dinner.

Ingredients:

  • 1 cup cooked brown rice
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1 package Gardein crispy tenders or any vegan chicken substitute
  • 4 cups mixed greens such as spinach, arugula, or kale
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Follow the directions on the package to cook Gardein crispy tenders until they are golden brown and crispy

Apple and avocado dices, mixed greens, red onion and cilantro chops, and roasted peanuts should all be put in a large bowl

To make the dressing, mix lime juice, olive oil, salt, and pepper in a small bowl with a whisk

Pour the dressing over the salad ingredients and gently toss to mix

Put the salad mix into bowls for serving

Put cooked Gardein crispy tenders on top of each bowl

Serve right away and enjoy
