Summer Berry Spinach Salad with Easy Strawberry Vinaigrette

Bursting with fresh flavors, this Summer Berry Spinach Salad with Easy Strawberry Vinaigrette is a delightful and nutritious vegan and paleo-friendly dish. A homemade strawberry vinaigrette, fresh spinach, and a variety of berries make for the ideal summer salad that is not only tasty but also healthful.

Ingredients:

  • 6 cups fresh spinach leaves
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1/4 cup sliced almonds
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup avocado, diced
  • For the Strawberry Vinaigrette:
  • 1/2 cup fresh strawberries, hulled and halved
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey or maple syrup optional for sweetness
  • Salt and pepper to taste

Instructions:

After washing and drying, transfer the spinach leaves to a large salad bowl

Toss in the spinach along with the chopped avocado, red onion, cucumber, sliced almonds, and mixed berries

Fresh strawberries, olive oil, balsamic vinegar, honey if using, and a dash of salt and pepper should all be combined in a blender or food processor

Blend the vinaigrette until its well-combined and smooth

Pour the strawberry vinaigrette onto the salad and gently toss to ensure that all of the ingredients are coated
