Ingredients:
- 6 cups fresh spinach leaves
- 1 cup mixed berries strawberries, blueberries, raspberries
- 1/4 cup sliced almonds
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, thinly sliced
- 1/4 cup avocado, diced
- For the Strawberry Vinaigrette:
- 1/2 cup fresh strawberries, hulled and halved
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey or maple syrup optional for sweetness
- Salt and pepper to taste
Instructions:
After washing and drying, transfer the spinach leaves to a large salad bowl
Toss in the spinach along with the chopped avocado, red onion, cucumber, sliced almonds, and mixed berries
