There is a lot of protein and flavor in these vegan breakfast tacos, which makes them a great way to start the day. Tofu that has been seasoned, black beans, fresh vegetables, and creamy avocado make a tasty and healthy breakfast option.
Ingredients:
- 1 cup firm tofu, crumbled
- 1 tablespoon olive oil
- 1/2 small onion, diced
- 1/2 bell pepper, diced
- 1/2 cup black beans, cooked
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 4 small tortillas, warmed
- 1 avocado, sliced
- Fresh cilantro, chopped for garnish
- Hot sauce optional
Instructions:
Set a pan on medium heat and add the olive oil
It will take about 5 minutes of cooking after adding the diced onion and bell pepper
In a skillet, mix together black beans, ground cumin, turmeric, salt, and pepper
Stir every now and then for another 5 minutes
You can warm the tortillas in a separate pan or the microwave
Spread the tofu and black bean mix out evenly on the warm tortillas
Add chopped cilantro and sliced avocado to the top of each taco
If you want, serve right away with hot sauce
