When you combine the tastes of carrot cake with the ease of a cookie, you get these delicious vegan carrot cake cookies. Anytime of the day, theyre great as a snack or a sweet treat.
Ingredients:
- 1 cup grated carrots
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Instructions:
Preheat oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, combine grated carrots, rolled oats, almond flour, maple syrup, melted coconut oil, raisins, chopped walnuts, cinnamon, nutmeg, ginger, salt, and baking soda
Mix until well combined
Scoop about 2 tablespoons of dough and form into a cookie shape
Place on the prepared baking sheet and flatten slightly
Bake in the preheated oven for 12-15 minutes, or until lightly golden brown
Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely
